In the lush heart of Benečija, among the woods of the Natisone Valleys, lies the quaint village of Altana, Utana in the local Slovenian dialect. Just a stone’s throw from the enchanting Kot Waterfalls and less than 10 minutes by car from the renowned Sanctuary of Castelmonte/Stara Gora, you can enjoy an authentic experience led by someone who loves and shares this land daily: Tiziana.
A long‑standing figure in local hospitality, Tiziana is celebrated for her passion in reviving traditional cuisine using carefully selected seasonal, locally sourced ingredients from nearby farms. Every dish she serves is a tribute to the land, crafted under the principles of Slow Food.
Your host will welcome you into her family-owned Trattoria Da Walter — a simple, genuine place beloved by locals and curious travelers alike—where time seems to stand still and flavors speak of ancient stories.
During the experience, Tiziana will lead you through a guided comparative tasting of local cheeses, accompanied by artisan bread, seasonal vegetables, foraged herbs, and pairings with typical wines, combining classical notes and creative twists. You’ll learn to identify aromas, textures, and flavors with fresh eyes and taste buds.
